Lemon & Coconut Slice

Ingredients

  • 1.25 cups (190g) raw cashews
  • 1.25 cups (82g) shredded or desiccated coconut
  • 1/4 cup (60g) dried dates (soaked for 10 minutes in hot water)
  • 2 tbsp lemon juice
  • 1/4 cup date water (reserved from soaking the dates)

Instructions 

  • Add all ingredients to a food processor and blend till combined and no chunks of nuts remain
  • Add the mix to a lined dish, approx 7”x4” size, and press down firmly, smoothing out with a spoon. It will be about 1cm in thickness. 
  • Place in the fridge to set for an hour before slicing. 
  • Store in the fridge for 3 days or freezer for 2 months.
