Peanut Butter & Date Weetabix Balls

Ingredients

  • 6 Weetabix
  • 1/2 Cup Peanut butter (any other nut butter or combo of nuts works here)
  • 1/2 Cup Dates soaked in 1 cup of boiling water for 10 mins to soften (approx. 12 dried) (serve 1/3 cup of the soaking liquid)
  • 1/4 Cup Almond flour (optional for coating the balls; can substitute with shredded coconut or cacao powder for 24 months+)

Instructions 

  • Add the weetabix, peanut butter, & drained dates to a processor and blitz till crumbly.
  • Add the reserved 1/3 cup of soaking water and then blend till combined
  • Use approx 1-2Tbsp to shape in to balls and roll in the almond flour (if using)

Notes

Store in the fridge for 5 days or freezer for 2 months
