1/4 cupwalnuts(finely chopped if not using a food processor)
1/4 cupcoconut oil(melted)
1apple peeled & diced(optional to pre cook for a richer flavour, however if not using a processor, steam/cook and mash to remove chunks)
1/2cupsoy milk(or other plant milk)
Sprinkle of cinnamon
To top
1cupmashed raspberries(fresh or frozen)
2Tbspof the mix above to use as a safe/soft crumble on top for little ones
Instructions
Add all the slice mix to a food processor and blend till combined and no large chunks of nuts/apple. If mixing by hand finely chop the nuts and cook & mash the apple.
Spread the mix into a lined dish (we use a 7”x4” dish but any works - may need extra raspberries if using a larger dish & less baking time if the slice base is thinner). Reserve 2 Tbsp to use as the “crumble.”
Add the raspberries & spread evenly with a spoon to create a jam like layer. Then add the crumble by placing little bits scattered on top and gently mixing in with a spoon/fingers to add some clusters.
Place in the oven at 180c and cook for 35-40 mins till cooked (it won’t be soft to lift the paper).
Allow to cool and then slice - we cut into 12 pieces and she eats around 2 as a breakfast meal and one as a snack. We also sometimes serve each slice in small slices so she picks up piece by piece ☺️
You can serve warm (my preference) or cold.
Notes
Store in the fridge for 3 days or freezer for 3 months.
