Super Simple Corn Fritters

Ingredients
1/2
Cup
Plain flour
(Wholemeal/wholewheat also works)
1/4
Cup
Polenta
1
Cup
Corn
(we used tinned no added salt; *you can gently mash to reduce choking hazards for babies)
1
Tsp
Garlic powder
1/4
Tsp
Smoked paprika
1
Large spring onion
(2 small; finely chopped)
1/2
Cup
Soy milk
(or other plant based milk)
Olive oil for cooking
(spray to coat the pan; or 1 Tbsp)
Instructions
Stir together all the ingredients
Spray a pan with olive oil and spoon in the mix, forming 10-12 fritters.
Cook on medium-high for 3 minutes on one side then flip & cook for a further 2 mins till lightly golden
Best served warm
Notes
Store in the fridge for 2 days or freezer for 3 months
To make these Gluten Free, just sub the plain flour with an all purpose gluten free flour.
