Super Simple Corn Fritters

Servings 10 -12 Fritters

Ingredients

  • 1/2 Cup Plain flour (Wholemeal/wholewheat also works)
  • 1/4 Cup Polenta
  • 1 Cup Corn (we used tinned no added salt; *you can gently mash to reduce choking hazards for babies)
  • 1 Tsp Garlic powder
  • 1/4 Tsp Smoked paprika
  • 1 Large spring onion (2 small; finely chopped)
  • 1/2 Cup Soy milk (or other plant based milk)
  • Olive oil for cooking (spray to coat the pan; or 1 Tbsp)

Instructions 

  • Stir together all the ingredients
  • Spray a pan with olive oil and spoon in the mix, forming 10-12 fritters.
  • Cook on medium-high for 3 minutes on one side then flip & cook for a further 2 mins till lightly golden
  • Best served warm

Notes

Store in the fridge for 2 days or freezer for 3 months
To make these Gluten Free, just sub the plain flour with an all purpose gluten free flour.
