Three Ingredient Pancakes

Ingredients

Cup
Oat flour
(Blended rolled oats)
1
Banana
2/3
Cup
Soy milk
(or other plant based milk)
1
Tsp
Baking powder
(optional; makes it fluffy)
Coconut oil for cooking

Tsp
Vanilla extract
(Optional)
Instructions
Make the batter adding the oat flour, banana, soy milk & baking powder to a blender and mix till smooth (~ 10 seconds)
Pour the batter in to desired sizes in to a hot pan using coconut oil to avoid sticking. Cook on medium for 2 mins each side.
Repeat with remaining batter
Notes
Store in the fridge for two days or freeze for 2 months
