Simple, Chrisymas pancakes for kids.
- 130 g self raising flour (sub with any other flour and add 1 tsp of baking powder to get the rise)
- 1 large banana (110g peeled weight)
- 190 ml soy milk
- 1 tsp vanilla extract (optional)
- 2 handfuls baby spinach
- 2 tsp olive oil (we use olive oil spray, can use coconut or other)
Add all ingredients except the oil to a blender and blend until smooth.
Preheat a frying pan over medium heat with a spray of olive oil or 1 tsp of coconut oil.
Pour the batter into a jug or squeeze bottle. Pour into the pan in tree shapes and add a little stump. You can sprinkle over homemade sprinkles or cranberries for "bauble" decorations. Cook for 2 to 3 minutes, flip, then cook for another 1 to 2 minutes.
Repeat with the remaining batter (this makes 10-15 trees, or 15-20 pancakes). Allow to cool slightly before serving.
Store leftovers in the fridge for 3 days or freeze for up to 2 months.
