Cut the zucchini in half, then into “fries” about 1cm in thickness.
Add the olive oil and toss to cover
Add the reminding ingredients for the crumbs and toss with tongs to coat.
Either cook in the airfryer by laying in one layer in the basket at 200c for 10mins turning halfway or on a tray with baking paper in one layer in the oven at 200c for ~15mins (oven depending), also turning half way.
Best served warm

These don’t need any sauce as the crumb is so flavourful, but I made a quick cheesy tomato sauce of tomato paste, water and nutritional yeast 🤤👌🏼
