Ingredients
2 cups/
200g
of Rolled Oats
2
very ripe medium bananas
1 cup
/250ml
of Soy milk
1
tsp
of Baking powder
((optional))
Instructions
Preheat the oven to 180c fan.
Add the oats to a blender and blend into a flour.
Add the remaining ingredients and blend quickly (around 5-10 seconds to combine - or hand mash and stir to combine).
Pour into a muffin tin (greased or lined) and add any toppings - we like a little slice of banana or chocolate chips for older kids (and adults).
Cook for 25 minutes (a couple minutes more or less depending on your oven, do the toothpick test).
Allow to cool for 10 minutes in the tray before placing on a cooling rack to cool.
Serve warm or cold - these will firm up as they cool.
Notes
Store on the bench for 3 days or freeze for up to 3 months.
