3 Ingredient Banana Oat Muffins

Ingredients

  • 2 cups/ 200g of Rolled Oats
  • 2 very ripe medium bananas
  • 1 cup /250ml of Soy milk
  • 1 tsp of Baking powder ((optional))

Instructions 

  • Preheat the oven to 180c fan.
  • Add the oats to a blender and blend into a flour.
  • Add the remaining ingredients and blend quickly (around 5-10 seconds to combine - or hand mash and stir to combine).
  • Pour into a muffin tin (greased or lined) and add any toppings - we like a little slice of banana or chocolate chips for older kids (and adults).
  • Cook for 25 minutes (a couple minutes more or less depending on your oven, do the toothpick test). 
  • Allow to cool for 10 minutes in the tray before placing on a cooling rack to cool. 
  • Serve warm or cold - these will firm up as they cool.

Notes

Store on the bench for 3 days or freeze for up to 3 months.
