1cup/140g of self raising flour(substitute with plain flour and 1.5tsp of baking powder)
Apple Topping:
1apple(we used a pink lady)
1/2tspof ground cinnamon
Instructions
Preheat the oven to 180c/350f.
Mash the banana in a large bowl, then add the milk and mash a little further to combine, some lumps are okay.
Add the flour and stir to combine.
Make the topping by peeling, coring, and dicing the apple (making sure to dice very small for babies under 12 months), then stir through the cinnamon. You can cook this in a pan to deepen the flavour if preferred.
Evenly spoon the mixture in to a mini muffin tray (if it’s not a non stick pan, lightly grease with coconut oil or vegan butter), then top with the apples.
Bake for the 15-18 minutes (every oven is different, cook until a skewer comes out clean).
Remove from the oven and allow the muffins to rest in the tin for 5 minutes before gently removing, nudging with a spoon if needed.

Notes
Store on the bench for 3 days, in the fridge for 5 days, or freeze for up to 2 months.
