Blend all the pancake batter ingredients together (or whatever pancakes you usually make).
Preheat a large frypan over medium-high heat with 1 tablespoon of coconut oil.
Then prepare the apples by peeling and then slicing them through the core so each piece can have a circle cut through them to create a donut shape. Use a cookie cutter or similar to cut the core out, leaving a hole. Dip each slice of apple into the pancake batter then place in the frypan.
Cook for 2-3 minutes each side.
Serve plain or with toppings (we did a very thin spread of nut butter with desiccated coconut, chia jam and coconut, and coconut yogurt with ground flaxseed).
