Blueberry Bliss Balls

Ingredients

  • 1 Cup Frozen Blueberries (Can substitute with other berries; fresh or frozen)
  • 1.5 Cups Rolled Oats (Can use quick oats or grind into a flour first if the food processor isn't strong)
  • 1/3 Cup Shredded Coconut (Unsweetened where possible)
  • 1 Tsp Vanilla Extract (Optional)

For coating

  • 1/3 Cup Shredded Coconut (for rolling the balls)

Instructions 

  • Pop everything except the extra coconut in the food processor and blend till smooth (you may need 1 Tbsp of water to help move things along depending on how dry your blueberries are).
  • Add the extra coconut to a bowl and then form balls using approx. 1 Tbsp of the mixture in your hand and then rolling in the coconut and shaping and coating in your hand again.

Notes

Store in the fridge for 5 days or freezer for 2 months
