1CupFrozen Blueberries(Can substitute with other berries; fresh or frozen)
1.5 CupsRolled Oats(Can use quick oats or grind into a flour first if the food processor isn't strong)
1/3 CupShredded Coconut(Unsweetened where possible)
1TspVanilla Extract(Optional)
For coating
1/3 CupShredded Coconut (for rolling the balls)
Instructions
Pop everything except the extra coconut in the food processor and blend till smooth (you may need 1 Tbsp of water to help move things along depending on how dry your blueberries are).
Add the extra coconut to a bowl and then form balls using approx. 1 Tbsp of the mixture in your hand and then rolling in the coconut and shaping and coating in your hand again.
Notes
Store in the fridge for 5 days or freezer for 2 months
