Blueberry Bliss Balls
Ingredients
- 160 g blueberries (fresh or frozen; can sub with other berries)
- 150 g rolled oats (can grind into a flour first if the food processor isn't strong)
- 30 g desiccated coconut (unsweetened)
- 1 tsp vanilla extract (optional)
For coating
- 30 g desiccated coconut
Instructions
- Pop everything except the extra coconut in the food processor and blend till smooth (you may need 1 Tbsp of water to help move things along depending on how dry your blueberries are).
- Add the extra coconut to a bowl and then form balls using approx. 1 Tbsp of the mixture in your hand and then rolling in the coconut and shaping and coating in your hand again.
Storage

Hi this looks like a delicious recipe, but I’m wondering about the coconut. You mentioned “extra” coconut. Not sure what that means. It calls for 1/3 cup but I don’t see how much “extra” is needed. Is that 1/3 cup mixed in or just for rolling the balls in?
Hey, there is an extra 1/3 cup of coconut for coating the balls in (1/3 in the balls and the other 1/3 rolled on them). Thanks!

Hi, this might be a silly question but what are rolled? I’m only familiar with one type of oats — the once for porridge. Would they work?
And follow up questions: can powdered porridge be used instead of oats?

Yes quick oats would work here as they’re getting blended anyways. Rolled oats are just the round flat ones, they’re called traditional oats in some other countries if that helps 🙂

These look really good, but would it work if I cooked the frozen blueberries first? Because as far as I’ve read, babies shouldn’t eat non-cooked frozen berries.
