Carrot Cake Bliss Balls

Servings 18 bliss balls

Ingredients

  • 4 small or 2 medium Carrots peeled & grated
  • 1 Cup Rolled oats
  • 1/2 Cup Walnuts (other nuts work)
  • 1/3 Cup/10 Small Dried pitted dates (soaked in hot water for 10mins to help blend; add up to 1/2 a cup if you prefer them sweeter or for older kids)
  • 2-4 Tbsp Water (use 2Tbsp to begin and add up to 4Tbsp if it’s too dry to blend; all depends on the carrots liquid content)

Spice Blend

  • 1/2 Tsp Cinnamon powder
  • 1/4 Tsp Ground nutmeg
  • 1/4 Tsp Ground ginger

To Roll

  • 1/2 Cup Shredded coconut (unsweetened; almond flour works as a substitute)

Instructions 

  • Add all ingredients (except the coconut for rolling) to a blender & blend till smooth. Use up to 4Tbsp of water to help it blend if needed.
  • Use approx 1-2Tbsp to shape in to balls and roll in the coconut.

Notes

Store in the fridge for 5 days or freezer for 2 months.
1. If you want a stronger flavour double the spices (start low and go from there)
2. These are soft when they first are blended. If they’re too soft to handle wait 10min for the oats to absorb liquid. They need to be soft for little ones to be able to eat them safely, and the mixture does solidify as they set over an hour.
