Add 150g of baby spinach & 150g of oat flour to a food processor and blend till a dough forms (a Tbsp of water may be needed if the spinach is dry and it doesn’t seem to be coming together - should take approx. 1 min)
Roll in to a ball in your hands & then use kitchen scissors to chop bits approx 1 inch in size in to the pot of boiling water (making sure not to splash yourself!)
Cook for 5 mins on medium to high
Strain and rinse
Serve with whatever you like

This keeps in the fridge for a couple days or in the freezer for 2 months. Just add a little water when reheating with a sauce.
