This is a really good iron source from the spinach & oats (especially when paired with a tomato sauce for the extra vitamin C, or a squeeze of lemon to help make the iron more absorbable). You can use whatever flour you want, & it is smoother with plain flour but the oat adds a nice flavour and a better nutrient profile 👏🏼

We served ours with an avocado sauce – avocado mashed with olive oil, garlic, nutritional yeast & lemon… and it went down very well!! Plate licking & palming it in to her mouth 😋 this is a go to in our house (for mum as well)

 

Two Ingredient Spinach Pasta

Ingredients

  • 150 g Baby spinach
  • 150 g Oat flour

Instructions 

  • Put a pot of water on to boil
  • Add 150g of baby spinach & 150g of oat flour to a food processor and blend till a dough forms (a Tbsp of water may be needed if the spinach is dry and it doesn’t seem to be coming together - should take approx. 1 min)
  • Roll in to a ball in your hands & then use kitchen scissors to chop bits approx 1 inch in size in to the pot of boiling water (making sure not to splash yourself!)
  • Cook for 5 mins on medium to high
  • Strain and rinse
  • Serve with whatever you like

Notes

This keeps in the fridge for a couple days or in the freezer for 2 months. Just add a little water when reheating with a sauce.

      If serving you and a little one I would say around 2-3 baby.toddler portions and 1 adult. For just little ones around 5-6 portions depending how much they eat. x
