  • ✨This is the easiest dinner that is simple and ready in under 15 minutes - perfect for midweek dinners ✨

🫛🌿 PEA & PESTO ORZO 🌿🫛
Serves 3 adults & 3 toddler portions 👶🏼 12+ months (see notes for serving from 6 months)

INGREDIENTS:
1 cup/150g of frozen peas 
250g of orzo
1 cup/250g of basil pesto (we use homemade)

Optional to serve: extra fresh basil* and pine* or ground seeds to top

HOW TO:
1. Pour the peas and orzo into a pan with boiling water and cook for 10-12 minutes (or according to your packet).
2. Drain and rinse, then stir through pesto and any extra basil leaves and serve (optional seeds)
3. Enjoy

NOTES:
❄️Store leftovers in the fridge for up to 3 days or freeze for up to one month. 

💧 If your pesto is dry, add a splash of water or olive oil and stir through to help loosen the sauce. Also add a tbsp or two of water when reheating as pasta dries out in the fridge. 

👶🏼 To serve from 6 months make sure to use a *homemade pesto without added salt, to flatten the peas, and chop up any basil leaves. Also finely grind the pine nuts (they are whole on one dish as this is an adult portion)

  • 🍌🫐BANANA & BLUEBERRY BREAD🫐🍌

This is the easiest & quickest banana bread for those days where you’re short on ingredients or want no fuss! Just four key ingredients that you probably have in your kitchen now! 

Vegan 🌱 suitable 6+ months 👶🏼 makes 10 slices
 
Ingredients:
2 medium ripe bananas (200g peeled weight)
1/2 cup/90g of blueberries (we used frozen; you can substitute with any other berries)
1 tsp of vanilla extract (optional)
3/4 cup/190ml of soy milk (or other)
1 cup/140g of self raising flour (substitute with plain flour and 1.5tsp of baking powder)

How to:
1. Preheat the oven to 200c/390f. 
2. Mash the banana in a large bowl, then add the remaining ingredients and stir to combine. 
3. Evenly spoon the mixture in to a lined loaf tin then place in the oven and bake for the 50-55 minutes (every oven is different, cook until a skewer comes out clean).
4. Remove from the oven and allow  to rest in the tin for 5 minutes before removing, and placing on a cooling rack to cool fully b before slicing. 
5. Enjoy!

Notes:
❄️ Store on the bench in an airtight container for 2 days, in the fridge for up to 5 days, or freeze for up to 2 months.
⏲️ Our oven is fan forced, adjust accordingly if needed. 
❗️This will firm up as it cools down. Do not remove from the oven until it is cooked, where a skewer comes out clean or when it has just stopped making the bubbling/crackling noise.

  • 🎃 This easiest way to get extra veggies in your kid… pancakes!

🥞 PUMPKIN PANCAKES 🥞 

BLW 6+ months 👶🏼 Makes 10 pancake ✨

INGREDIENTS:
1/2 cup/130g of cooked butternut squash or pumpkin, mashed
1/2 cup/80g of self raising flour (sub with oat flour, spelt or plain flour and 1 tsp of baking powder)
1-2 Tbsp of maple syrup (optional sweetness, omit for under 12 months)
1/2 tsp of cinnamon 
1/3 cup/80ml of soy milk (or other)
1 Tbsp of coconut oil, for cooking

HOW TO:
1. Add the pumpkin to a large bowl and mash to remove any lumps with a fork. 
2. Add all of the remaining ingredients (except the oil) and stir to combine. 
3. Preheat a pan over medium to high heat with 1/2 a tbsp of coconut oil and spoon the pancake batter in (cooking in two batches if needed). 
4. Cook for 2-3 minutes each side and repeat for any remaining batter. 
5. Enjoy!

Store leftovers in the fridge for 3 days or freeze for up to 2 months. 

I served the toddler portion with strawberries (chop to a safe size depending on the child age) and the adult portion with chopped pecans (finely chop if serving to toddlers or blitz for babies), maple syrup and coconut yogurt and it was so good!

  • 🎄🍪 GLUTEN-FREE VEGAN GINGERBREAD COOKIES 🍪🎄

About to be making these on repeat for the next month 🙌🏼

INGREDIENTS:
2 cups/200g of almond flour 
4 Tbsp/40g tapioca 
1/3 cup/50g of coconut sugar
3 tsp of ground ginger*
2 tsp of cinnamon 
1/4 tsp of nutmeg 
1 tsp of baking powder
2 Tbsp of molasses 
2 Tbsp of coconut oil (melted)
2 Tbsp of water 

OPTIONAL ICING:
1/4 cup of icing sugar 
1-2 tsp of soy milk (start with 1 & gradually add, you want it thick enough that it doesn’t go runny, but thin enough to pipe)

HOW TO:
1. Add all of the dry ingredients to a bowl & stir together.
2. Then add the wet ingredients (coconut oil, molasses & water) & stir to combine into a dough ball.
3. Scoop the dough into cling film, cover & squeeze the dough tightly together. 
4. Chill in the freezer for 25 mins or in the fridge for 1 hour. 
5. Once chilled, preheat the oven to 180c/350f.
6. Place the dough on a large piece of baking paper, fold over with the extra baking paper (or an extra layer for the top), & roll to around 0.5cms thick. 
7. Use cookie cutters (if the dough is sticky you can dip them in icing sugar or almond flour to avoid sticking) to cut out the shapes you want, gently handling them (the dough is soft & sticky but able to cut shapes, if not chill in the fridge a little longer), then placing them on a baking sheet. Roll leftover dough & repeat until no dough remains. 
8. Bake for 8-10 minutes until lightly golden on the edges. 
9. Allow to cool on the tray for 5 mins (they will be soft but firm up when cooled) before gently transferring to a cooling rack to cool fully before icing whatever you like (we used a small freezer bag with the corner cut to pipe thinly)
