This is made using the lentil tofu recipe and it is so good. The nori can be removed before serving too (I find our little vegan doesn’t like it so much so it’s more for flavouring the marinade). Because this contains soy sauce it’s not recommended for under 1 year of age (use low salt soy sauce or tamari if you can).

Vegan Salmon

Ingredients

  • 1/3 Block Lentil tofu (you can use soy too; approx 200g)
  • Olive oil spray

Marinade ingredients

  • 1 Tbsp Soy sauce (You can use low salt)
  • 1 Tsp Sesame oil
  • 1 Tsp Apple cider vinegar
  • 1 Tsp Maple syrup
  • 1/2 Tsp Garlic powder
  • 1/2 Sheet Nori crumbled
  • 1/2 Cup Water

Instructions 

  • Slice your tofu into desired thickness, then score to create slices on the top about 1/2 a cm apart (allows the flavour to marinate further. Also use chopsticks to avoid cutting all the way through).
  • Combine all the marinade ingredients and then add the tofu and leave to marinate for a minimum of 20mins (the longer the stronger)
  • Spray a pan with a little olive oil, then cook over medium-high heat, adding the leftover marinade occasionally. Flip after 5mins then add the remaining sauce & cook a further 2 mins till all the sauce is evaporated (make sure to add the sauce to avoid the tofu sticking).
  • Serve warm
