This is the easiest vegan tofu feta recipe you will ever make. It takes about 5 minutes to prepare, and is made with tofu and some simple kitchen staples that you’ll most likely have in your cupboard. This goes great as a quick snack on its own or added to any dish to boost the flavour and give a bit of a protein boost. Just make sure to cut, flatten or prep in strips to make it safe for serving (depending on your child’s age).

The Easiest Vegan Tofu Feta

Ingredients

  • 400 g firm tofu (diced into small cubes - ideally pressed for 10 mins to remove excess liquid)
  • 3 tbsp white miso paste
  • 1 lemon (juice - approx 3 Tbsp, can sub with extra apple cider vinegar)
  • 3 tbsp apple cider vinegar
  • 3 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • 1/2 tsp sea salt (omit for under 12 months)
  • 2 tbsp nutritional yeast (optional for an extra cheesy boost)

Instructions 

  • Add all of the ingredients (except for the tofu) into a large jar and stir to combine into a sauce.
  • Add the tofu to the brine/liquid, cover with a lid, and shake vigorously to coat.
  • You can enjoy this straight away, however it has a stronger flavour after it has been left to marinate for 24 hours.

Storage

Store in the fridge for up to 7 days.

Notes

This one packs a flavour punch - if you prefer a more traditional look, omit the nutritional yeast and drop the miso paste down to 1 Tbsp (add 1 Tbsp extra of olive oil to accommodate this)
