Vegan 🌱 Baby Led Weaning 👶🏼 Suitable 6+months

Have had a few messages asking for our pancake recipe (which was one of the first way back, so remade this version). These are so easy and so versatile – always means extras leftover for my breakfast and for day snacks too!

Three Ingredient Pancakes

Ingredients

  • 120 g oat flour (Blended rolled oats)
  • 1 large banana (110g peeled)
  • 160 ml soy milk (or other plant based milk)
  • 1 tsp Baking powder (optional; makes it fluffy)
  • 1 tsp vanilla extract (optional)
  • 1 tbsp coconut oil (for cooking)

Instructions 

  • Make the batter adding the oat flour, banana, soy milk & baking powder to a blender and mix until smooth (~ 10 seconds), or mashing and stirring together.
  • Oil a frying pan over medium heat, and pour the batter into desired sizes (makes ~16 pancakes). Cook on medium for 2 mins each side.
  • Serve with whatever you like.

Storage

Store in the fridge for 3 days or freezer for 2 months.

    I cannot thank you enough for this recipe, I have been trying to make eggless, diary-free pancakes for my daughter for months and they always turn out runny and don’t cook properly! This recipe turned out fluffy and so tasty 😊

    My son and I love this recipe and have it every week. I make them as pikelets and my toddler has been known to eat 9! I sometimes add hemp seeds or nut butter for extra nutrition. Thanks for sharing this recipe x

    Amazing recipe, my kids actually ate it!! I added spirulina powder to make them green.
