These vegan grinch pancakes are such a fun way to bring some festive magic to breakfast. They’re soft and fluffy, naturally sweet, packed with spinach for a boost of iron, and the colour alone gets kids so excited, let alone the excitement of having them in a christmas tree shape! They have no added sugar which makes them ideal for babies, toddlers and picky eaters, and the batter blends up in less than a minute which is exactly what you want on busy December mornings.

 

They’re perfect for Christmas breakfast because the tree shapes make it feel special, they look festive on a platter, and you’re sneaking in veggies without anyone noticing. You can make them big, small, or cut into trees after cooking if you prefer too. We llike to add homemade coconut sprinkles or cranberries for a little colour and a bauble effect.

Vegan Grinch Pancakes

Simple, Chrisymas pancakes for kids.

Ingredients

  • 130 g self raising flour (sub with any other flour and add 1 tsp of baking powder to get the rise)
  • 1 large banana (110g peeled weight)
  • 190 ml soy milk
  • 1 tsp vanilla extract (optional)
  • 2 handfuls baby spinach
  • 2 tsp olive oil (we use olive oil spray, can use coconut or other)

Instructions 

  • Add all ingredients except the oil to a blender and blend until smooth.
  • Preheat a frying pan over medium heat with a spray of olive oil or 1 tsp of coconut oil.
  • Pour the batter into a jug or squeeze bottle. Pour into the pan in tree shapes and add a little stump. You can sprinkle over homemade sprinkles or cranberries for "bauble" decorations. Cook for 2 to 3 minutes, flip, then cook for another 1 to 2 minutes.
  • Repeat with the remaining batter (this makes 10-15 trees, or 15-20 pancakes). Allow to cool slightly before serving.

Storage

Store leftovers in the fridge for 3 days or freeze for up to 2 months.
