It took me six years to finally make this, and I regret it taking me so long 😅 this Burmese tofu is so simple, easy, and cheap! It’s made with just chickpea flour and water (and optional salt and turmeric) and it makes for such a nice swap from regular soy tofu (perfect for allergy families!)

It’s a great dish to prep ahead so you’ve got an easy and different plant protein that you can add to salads, veggie bowls, as a popcorn nugget snack, or however you like!

🥭 MANGO LASSI ICECREAMS ✨ What’s a better way to 🥭 MANGO LASSI ICECREAMS ✨

What’s a better way to have a mango icecream than in a mango cheek shape… there is none. These Mango Lassi Icecreams take 5 minutes to prep, they’re creamy, baby-friendly (6+ months), and naturally sweet. 

INGREDIENTS:
2 Mangoes (the flesh - about 600g diced)
1/2 cup of unsweetened coconut yoghurt
Optional: seeds from 2–4 cardamom pods

Other optional add-ins: a tiny grate of fresh ginger, a squeeze of lime, or a pinch of turmeric

HOW TO:
1. Carefully score and scoop out the mango cheeks (we’re using the cheeks as the popsicle moulds!). Trim around the seed to get all that extra mango goodness.
2. Add mango flesh, coconut yoghurt, and any optional flavours into a blender. Blend until completely smooth.
3. In the centre of each mango cheek, slice a small line just wide enough for your popsicle stick. Insert the stick halfway.
4. Place the cheeks on a tray. Pour the mango mix into each cheek, nudging it under the stick and smoothing the top so it keeps its classic mango shape.
5. Freeze for 4 hours or overnight, until completely set.
6. Pop out and enjoy

Vegan 🌱 Naturally coloured 💕 12+ months 👶

Quite possibly my most controversial recipe…. But who doesn’t love a healthier way to add colour to young kids food. 

🫐 For this, we coloured the sprinkles using a mix of berry powders (raspberry for red, strawberry for pink, blueberry for purple), and turmeric for yellow & spirulina for green 🍓

We store these long term for 6+ months in the freezer to sprinkle over pancakes, raw desserts, toast, coconut yogurt, porridge, banana pops, frozen cups, or anything that needs a little toddler-friendly colour 🌈

Welcome back to Budget Bites: a series where I recreate kids snacks to be healthier and cheaper than their store bought alternatives 🌱

This week we are recreating the classic crackers and cheese dip known as Le Snak for the Aussies, Dairylea Dunkers (you can roll them like breadsticks) for you guys in the UK, or Handi Snacks for my US friends 🙌🏼

In case you missed this last time…. THIS IS THE In case you missed this last time…. 

THIS IS THE ULTIMATE WAY TO MEAL PREP FOR BUSY FAMILIES 🙌🏼

This is what I’m calling Duplo Dinners, and it has completely changed the way I freeze and prep meals. Instead of freezing one full meal, you prep and freeze each component separately: grains, sauces, proteins, and veggies… like building blocks.

Then, when you need a quick meal, you can mix and match different combos to create endless healthy, nourishing, and varied dinners or lunches (& your kids can pick what they want, or for when they don’t like what’s on offer for dinner). It’s like having your own little satisfying adult Lego set in the freezer 🙌🏼. This whole meal prep was done over the space of a month, so each time I cook something like curry, tacos, chilli, or grains and veg, I make enough for an extra meal or two so there’s extras to stick the freezer with. 

We used the 100ml meal prep freezer containers from @seedandsproutco which are the perfect portion size: I find 3 blocks (a protein, a grain, and a veg base) works for our 4 year old and 5-6 blocks works for adults. Then you just pop them in your glass container, defrost when you’re ready, warm it up and enjoy! 

In this reel I made up a taco bowl, a curry bowl with two curries, and a curry and veg mix so there was 3 simple and similar, but different, meals made at once. The recipes I had stocked in this stash are:

🌶 Channa Masala
🍛 Lentil Dahl with spinach 
🌮 Taco mix with mushroom and peppers
🥣 Vegan Sour Cream
🍠 Roasted Sweet Potato
🥬 Greens 
🌽 Black peppered corn kernels
🍚 Quinoa
🍘 Brown Rice
