These Chickpea Choc Chip Protein Cookies are the perfect cross between a cookie and a fluffy muffin top. They are naturally sweetened and packed with wholesome ingredients like chickpeas, almond meal and oats to make a satisfying snack the whole family will love.
Unlike traditional cookies, these contain a boost of plant-based protein and fibre to help keep little tummies fuller for longer. They’re ideal for lunchboxes, afternoon tea or those moments when you need a snack that’s a little more nourishing than your average biscuit.
One of my favourite ingredients in these cookies is chickpeas. They blend seamlessly into the batter, adding protein, iron and fibre without affecting the flavour. Even fussy eaters won’t know they’re there, making these a fun way to sneak in a few extra nutrients.
For younger children, you can easily swap the chocolate chips for raisins or chopped dried fruit if you prefer to avoid chocolate. Finely chopped dried apricots also work well and add an extra boost of iron, while still keeping the cookies naturally sweet and delicious.
