If you’re looking for a fun and colourful breakfast or snack, this blue chia mousse is such an easy one to make! I love how a few simple ingredients can turn into something that looks this vibrant, and the best part is that it takes just minutes to prepare before popping it in the fridge to set.

Made with coconut yoghurt, chia seeds, blue spirulina and a little maple syrup, this chia mousse blends up smooth and creamy rather than having the usual texture of traditional chia pudding. I like to divide it into little jars and add fresh fruit or an extra spoonful of yoghurt on top, depending on what we have at home.

It’s a great make-ahead option for busy mornings, too. You can prepare the jars the night before and have breakfast ready to go the next day, or keep a few in the fridge for an easy snack. You can even get creative with the toppings and let little ones choose their own favourite combinations.

If you’ve never tried blending chia seeds before, this is a lovely place to start. The result is a thick, creamy blue chia pudding that’s simple to make, easy to customise and a fun way to add a little colour to your breakfast table.

Blue Chia Mousse

Prep Time 5 minutes
Setting Time 1 hour
Total Time 1 hour 5 minutes
Servings 4
Suitable For 6m+

Ingredients

  • 500 g coconut yoghurt
  • 85 g chia seeds
  • 60 ml maple syrup (omit under 18 months, and sub with 1 cup of berries of choice - can also add berries for any age)
  • 1 tbsp blue spirulina (optional, this is very mild in flavour and gives the vibrant blue colour)

Instructions

  • Add the ingredients to a blender and blend until completely smooth and creamy, stopping to scrape down the sides if needed to ensure everything is well combined (if the mousse is thicker than you’d like, blend through a small splash of plant milk to reach your preferred consistency)
  • Divide the mixture between 4 to 5 small jars or containers.
  • Add your favourite toppings, such as fresh berries, sliced banana or an extra dollop of coconut yoghurt.
  • Place in the fridge for at least 1 hour to allow the chia seeds to absorb the liquid and thicken the mousse. For the best make-ahead option, leave overnight.
  • Serve chilled. Store covered in the fridge and enjoy within 5 days.

Storage

Store in the fridge for 5 days.

Notes

If the mousse is thicker than you’d like, blend through a small splash of plant milk to reach your preferred consistency.
