Stuck for a quick & healthy breakfast idea? This Carrot Cake Overnight Oats recipe is one of our new favourite breakfasts to make the night before when there’s a busy morning ahead. And this has the bonus of veggies for breakfast! 

Carrot Cake Overnight Oats

Prep Time 5 minutes
Servings 1 adult 1 toddler/baby

Ingredients

  • 1 small Carrot (finely grated)
  • 1/2 cup/45g of Rolled oats
  • 2/3 cup/170ml of Soy milk (or other)
  • 1 Tbsp of Date paste (note below; can substitute with 1-2tsp of maple syrup or sweetener of choice)
  • 1/2 tsp of Ground Cinnamon
  • 1/4 tsp of Ground Nutmeg (optional)

Optional to serve/top

  • 2-4 Tbsp Natural coconut yogurt (or other)
  • Little bit of carrot and finely crushed walnuts (make sure no chunks!!) for decoration

Instructions 

  • Add all of the ingredients to a jar or container and stir to combine.
  • Place in the fridge for 4+ hours or ideally overnight for the oats to soak up the liquid. 
  • Serve as is, or top with anything you like, or the suggested toppings above. 
  • Store in the fridge for 3 days.

Notes

*Note: date paste is just dates soaked in hot water for 10 minutes and then blended in the same with water. We usually do a ratio of 1 cup of dates soaked in 1.5 cups of water. Store in a container in the fridge for up to a week - this paste goes good in smoothies, or anywhere you’d rather a natural sweetener
