Healthy Breakfast Brownie Bars

Ingredients

  • 2 large bananas (220g peeled)
  • 150 g peanut butter (100% natural)
  • 110 g oat flour (blended oats)
  • 25 g cacao powder (sub for carob powder for babies under 24 months)
  • 60 ml soy milk (or any other)
  • 1 tsp baking powder (optional)

Instructions 

  • Preheat the oven to 180c/350f.
  • Mash the bananas in an oven proof dish, then add all of the remaining ingredients, stir to combine, and gently flatten with the back of a spoon.
  • Bake for 25-30 minutes (it will be slightly firm to the touch, and will firm up as it cools).
  • Leave to cool in the dish fully then slice and serve.

Storage

Store in an airtight container in the fridge for 5 days, bench for 2 days, or freeze individual portions for 3 months.

Notes

*  To make this suitable for babies 6-24 months, sub the cacao for carob powder (due to the caffeine in cacao)
Make these gluten-free by ensuring to use gluten-free oats.

    I made these tonight and we loved them.
    We made a few small add ons, sunflower seed and walnuts. We also did 60gram almond meal and 60 gr oat flour.
    My daughter ate too much of the batter haha
