This Creamy Broccoli Pasta sauce is made with just broccoli, avocado, and soy milk. It is vegan, suitable from 6 months old, and serves 1 large adult portion and 2 baby/toddler portions. It is such a quick and healthy dinner or lunch option loaded with nutrients.

Creamy Broccoli Pasta

Prep Time 5 minutes
Cook Time 10 minutes
Servings 1 Adult & 2 Baby portions

Equipment

  • 1 blender

Ingredients

  • 2 cups/ 4 florets/ 160g of raw Broccoli
  • 1 cup of Soy milk (or other)
  • 1 small Avocado (seed & skin removed)
  • 150g of uncooked pasta of choice

Instructions 

  • Cook the pasta according to the packet. 
  • While the pasta is cooking, cook the broccoli either by boiling or steaming over medium-high heat for 10mins till soft enough to blend. 
  • Add the cooked broccoli to a blender with the soy milk & avocado & blend till smooth. 
  • Pour over cooked pasta and serve (we like a sprinkle of vegan parmesan cheese on ours).

Notes

If storing in the fridge for a few days, add a squeeze of lemon or lime juice to help the avocado from browning. 
This goes great with lentil or chickpea pasta as a source of protein

      Hi, you can freeze this as a sauce on its own or with the pasta too x
