8 different veggies ✨Vegan 🌱 Baby Led Weaning 👶🏼 Suitable 6+months

There’s 8 different veggies in this & it’s such a good hit of nutrition and flavours 💚 I used a ratatouille style base and then blended them to make a smooth sauce, although you could remove half the veg and dice them and stir through.

This makes 2L of sauce which is enough for 6 large adult portions and 3 baby/toddler portions (or tonnes of baby ones that you can freeze individually)

Hidden Veggie Ratatouille Pasta

Servings 6 large adult portions & 3 baby/toddler portions

Ingredients

Roasting ingredients

  • 3 Eggplant/aubergines (ends removed & chopped in chunks)
  • 2 Small/medium zucchini/courgettes (ends removed & chopped in chunks)
  • 1 Pepper/capsicum (any colour; cut sides & bottom off & discard centre seed bit)
  • 1 Large onion (skin removed, cut in half)
  • 2 Yellow squash (ends removed & cut in half)
  • 4-5 Cloves Garlic (chop the top bit off and roast in the skin as they squeeze out)
  • Olive oil spray

Sauce ingredients

  • 800 g tinned chopped tomatoes
  • 3 Tbsp Tomato paste (optional, but adds a little sweetness)
  • 1 large handful of basil leaves
  • 1/2 Tsp Dried oregano (you can swap for other herbs or omit)
  • 1/2 Tsp Dried thyme (you can swap for other herbs or omit)
  • 1 Tbsp Olive oil
  • Salt & Pepper (to taste)

Instructions 

  • Prep your veggies and then place all on a lightly sprayed roasting tray. Spray the tops of the veggies with a little more olive oil
  • Cook in the oven at 200c for 40-45 mins till done. Optional: turn the veggies half way
  • Add all the veggies, any leftover juices in the tray, and all the extra sauce ingredients to a blender and blend till smooth (or chunky for older babies or preference)
  • Taste, and season if needed with salt (for babies >12 months we use a little iodised salt), and pepper.
  • Pour over cooked pasta (250g of uncooked pasta for 2 adults and one toddler works for us) and serve.

Notes

Note: you can peel the eggplants and zucchini if you don’t want the a dark coloured sauce.
