These Mango Lassi Popsicles are a healthy and tasty snack for babies, toddlers and adults. Perfect for teething babies and an excellent way to cool down on hot summer’s days. 

 

Mango Lassi Popsicles

Prep Time 5 minutes
Freezing time 4 hours
Servings 12 large popsicles

Equipment

  • blender

Ingredients

  • 3 cups/ 500g of diced mango  (fresh or frozen)
  • 2 cups/ 500g of coconut yogurt (we used a vanilla flavoured one)
  • Seeds from 2-4 cardamom pods (depending on how strong of a cardamom flavour you want)

Other flavour ideas

  • Ginger, lime, or saffron

Instructions 

  • Puree the mango in a blender or food processor and then reserve around 1/3 of a cup of the puree to use in the popsicles.
  • Add the yogurt and cardamom seeds to the blender and blend until smooth.
  • Spoon 1 tsp of the reserved mango puree into the tops of the popsicle moulds, fill halfway with the mango lassi mix, add a tsp more of the mango puree and finish with the mango lassi (if you have any leftover, you can enjoy it as a smoothie, if you don’t have enough for your moulds add a little extra coconut yogurt in the ends. 
  • Place in the popsicle sticks and put in the freezer for 8 hours or overnight until frozen. 
  • Enjoy.

Notes

Store in the freezer for up to 2 months.
