This  PB & J Baked Oatmeal Slice is such a healthy snack that can go in lunchboxes or as a tasty & filling breakfast. For older kids/adults you can add sweetness like dates blended in or maple syrup if you prefer it sweeter. This makes 6 very large slices (so 12 servings for younger babies and 6 large portions for hungry toddlers or adults).

Benefits of raspberries for babies

Raspberries are a powerhouse of essential nutrients for your baby’s growth and development. With a delicious and sweet taste, they are the perfect food to incorporate into your baby’s diet.

Vitamin C is an important component found in raspberries, playing a vital role in supporting your baby’s immune system. It also helps iron absorption – which is very important for little vegans. They are also a good source of fibre, helping with digestive health. 

Another benefit is the high levels of antioxidants they contain. Antioxidants, such as anthocyanins, quercetin, and catechins, protect the body from harmful free radicals and have anti-inflammatory and antiviral properties.

Raspberries are also a source of folate, which is important for proper brain development. The potassium found in raspberries helps regulate blood pressure and supports healthy heart function.

Make sure to always consult with a paediatrician before introducing new foods to your baby’s diet, and start with a small amount to monitor for any potential allergic reactions.

Ingredients

  • 2 large bananas (220g peeled weight)
  • 140 g peanut butter (100% natural, sub with any nut or seed butter)
  • 110 g quick oats

Optional for younger toddlers/babies or those wanting a softer slice:

  • 60 ml soy milk (or other)

To Top

  • 6 tbsp chia Jam (any berry jam works, or 1/2 cup of mashed berries stirred through )

Instructions 

  • Preheat the oven to 180c/350f. 
  • Mash the bananas in an oven proof dish (you can make this thinner for younger babies by using a larger dish, or slice into thin finger strips to hold, just reduce the cooking time if making larger - we used a 7”x5” dish which yields a slice 1-1.5” thick slice).
  • Add the nut butter and mix with the banana.
  • Add the oats and stir to combine.
  • You can leave out the milk if you would prefer a chewier slice, however for younger babies or toddlers who have a preference for softer foods add the milk at this stage and stir through. 
  • Top with the chia jam, or stir through berries.
  • Bake for 30 (+/- a couple minutes, it will look golden on the sides or bottom and will be firm to push) minutes and allow to cool before cutting into ~12 slcies and serving.

Storage

Store in an airtight container in the fridge for 5 days, bench for 2 days, or freeze individual portions for 3 months. 

Notes

If it seems too soft to cut, leave to cool for 15-20 minutes as it firms up with time.

    I used almond soft butter and almond milk. They are delicious! I wish I would have made a bigger batch so I can enjoy them myself! Thanks for sharing

    Delicious! I enjoy these just as much as my little one. I used this recipe as an easy way to introduce nut allergen, I usually use peanut butter but also made a cashew butter one with cinnamon & apples instead of raspberries. A very versatile recipe.
