Vegan 🌱  6+ months (with adjustments) 👶🏼 makes 9 slices

This  Pumpkin Pie Baked Oatmeal Slice is such a healthy snack that can go in lunchboxes or as a tasty & filling breakfast. For older kids/adults you can add sweetness like dates blended in or maple syrup if you prefer it sweeter. This makes 9 large slices (for babies under 12 months you could cut in to 12 servings).

Pumpkin Pie Baked Oatmeal Slice

Ingredients

  • 1 diced cup/170g of cooked pumpkin  (approx 200g uncooked - we steamed ours, cut in chunks for 15 minutes till soft)
  • 1/2 cup/ 150g of nut butter (we used a peanut blend, but any works here: peanut butter, almond butter, sunflower seed, tahini, whatever you prefer or need)
  • 1.5 cups /180g of quick/Porridge Oats (rolled oats also work)
  • 1 handful of sultanas/raisins (sub with halved blueberries for babies under 18 months due to sugar content and size)
  • 2/3 cup /160ml of soy milk (or other)
  • Optional to top: 1 tsp of pumpkin pie spice, or cinnamon

Instructions 

  • Preheat the oven to 180c/350f.
  • Mash together the cooked pumpkin and nut butter to a smooth consistency using a fork in a baking dish (we used a 9" x 11" baking dish),
  • Add all remaining ingredients and mix together, smoothing the top with a fork.
  • Add the optional pumpkin pie spice or cinnamon on top, gently spreading over the top (you can stir through if prefered).
  • Bake for 30 minutes before removing and allowing to cool for at least one hour before slicing (this helps it firm up).

Notes

Store in the fridge for 3 days, or freeze for up to 3 months.
