These 2 ingredient Sweet Potato Pizza Pinwheels are a beta-carotene powerhouse (the sweet potato, carrot, capsicum, & tomato paste)! Beta-carotene converts into vitamin A (retinol) in the body which is good for our eyes, skin, and immune system 👌🏼 They are a great snack or quick meals for little ones, perfect for lunchboxes, and are great to stock the freezer with.
These came about when I wanted something that was like normal pinwheels but we didn’t have any pastry, and the bonus of these is how simple and healthy they are – no additives or salt!! You can make this with oat flour also, the dough is just a bit harder.

Sweet Potato Pizza Pinwheels
Ingredients
- 200 g sweet potato (mashed, from 1 medium/approx 300g uncooked weight)
- 180 g self raising flour
Add ins - use whatever you like
- 4 tbsp tomato paste
- 1 tsp olive oil
- 1 tsp Italian herbs
- 1/4 small carrot (grated)
- 1/4 small capsicum (finely diced)
- 30 g vegan cheese (grated)
Instructions
- Add the cooked sweet potato to a bowl and mash with a fork (or use a food processor to mash the use the dough blade and create the dough this way)
- Add the flour and combine in to a dough (get in there with your hands too).
- Flour a surface and roll the dough out to about 1/2cm in thickness, aiming for a rectangle shape (you can pinch pieces of the dough from the sides to shape it).
- Top with the sauce & fillings, then gently roll, and slice in to 1-2cm disks (makes around 10-12 slices).
- Add to a lined tray and cook in the oven at 180c for 15-20mins
- Allow to cool slightly before serving.
Storage

These are so good! I made them for my 17 month old who loved them and of course mom had to try them too (they are beyond delicious) We will definitely be making these a regular meal in our house.

My 14 month old loved these. I added grated zucchini, capsicum, mushrooms, and lentils. I think if I made again I would roll the dough even thinner as it was quite heavy but my little guy still ate a whole scroll in one sitting.

These are super good. I admit I was skeptical making them, thinking they would be one of those “pizza” recipes that ends up being kinda funky, like a cracker or biscuit texture… but they come out nice and fluffy.
I used some leftover pasta sauce mixed with tomato paste for the sauce, a vegan melty mozz recipe that I usually have on hand, and added finely diced green bell pepper and olives.
I had to add a little extra flour for the dough to come together but it was fairly easy to work with. Will make again for sure!

My dough didn’t turn out. It was very crumbly and I was unable to roll the ingredients. Tips to help with this next time?
