Apple Pie Overnight Oats
Ingredients
For baby/toddler portion (serves 1-2)
- 1/4 Cup Rolled oats
- 1 Tsp Chia seeds
- 1 Tsp Almond butter
- 1 Tsp Cinnamon apples (just apples, peeled, diced and cooked for 10 mins with 1/2-1tsp of cinnamon; more to top/serve based on how much you want)
- 1/2 Tsp Ground flax seed
- 1 Sprinkle Cinnamon
- 1/4 Cup + 1 Tbsp Soy milk (or other plant based milk)
For Adult portion (1 BIG portion)
- 1/2 Cup Rolled oats
- 1 Tbsp Chia seeds
- 1 Tbsp Almond butter
- 1 Tbsp Cinnamon apples (plus however much you want to add on to the top)
- 1 Tsp Ground flax seed
- 1 Sprinkle Cinnamon
- 2 Dates chopped for sweetness (can sub with 1 Tbsp of maple syrup)
- 3/4 Cup Soy milk (or other plant based milk)
Instructions
- To two separate containers (or one if you prefer), add the oats and then chia seeds and stir to spread the chia seeds otherwise they can clump once the almond butter of milk is added.
- Add the remaining ingredients and stir to combine. Cover and place in the fridge for 4+ hours or ideally overnight for the oats to soak up the liquid.
- Serve with extra apples and anything else you you like.
Notes
Overnight oats can sometimes feel too dry, depending on how you like them, if they are too dry for your preference just add a little milk and stir before serving.
Leftovers last 2 days in the fridge.
