Our Coconut & Dragon Fruit Porridge is not only a delicious way to start your day, but it also provides a variety of health benefits. The vibrant pink colour of the dragon fruit not only makes this porridge visually appealing, but it is also a good source of antioxidants, fibre, and vitamin C.

We make it with our standard porridge recipe and customise it based on the fruits that we have on hand. To give it an extra nutritional boost and enhance its creaminess, we add chia seeds, coconut or flaxseed oil to the mixture. With its versatile ingredients, this porridge is perfect for those looking for a filling and healthy breakfast option.

Coconut & Dragon Fruit Porridge

Servings 1 baby and 1 adult

Ingredients

  • 1/2 cup rolled oats (or quick oats)
  • 1/2 cup soy milk
  • 1/2 cup water
  • 1/4 cup shredded coconut (optional)
  • 1/2 -1 cup dragon fruit (we had frozen and we use 1/2 a cup but use however much you like)

Instructions 

  • Add all the ingredients except the dragonfruit to a pan and bring to the boil.
  • Reduce heat to low-medium and add the dragonfruit, gently mashing as it softens.
  • Cook until the oats are done and the liquid has been absorbed (approx 5-10mins)
  • Serve warm - we like ours with coconut yogurt, chia jam & strawberries on top
