These Healthy Breakfast Brownie Bars are such a healthy snack that can go in lunchboxes or as a tasty & filling breakfast. For older kids/adults you can add sweetness like dates blended in or maple syrup if you prefer it sweeter.

Healthy Breakfast Brownie Bars
Ingredients
- 2 medium ripe Bananas (220g peeled)
- 1/2 cup/ 150g of nut butter (we used 100% peanut)
- 1 cup/ 110g of oat flour (blended oats)
- 1/4 cup/ 25g of cacao powder (sub for carob powder for babies under 24 months due to caffeine)
- 1/4 cup/ 60ml of soy milk (or any other)
- 1 tsp of baking powder (optional)
Instructions
- Preheat the oven to 180c/350f.
- Mash the bananas in an oven proof dish, then add all of the remaining ingredients, stir to combine, and gently flatten with the back of a spoon.
- Bake for 25-30 minutes (it will be slightly firm to the touch, and will firm up as it cools).
- Leave to cool in the dish fully then slice and serve.
Notes
Store in an airtight container in the fridge for 5 days, bench for 2 days, or freeze individual portions for 3 months.
* To make this suitable for babies 6-24 months, sub the cacao for carob powder (due to the caffeine in cacao)
Make these gluten-free by ensuring to use gluten-free oats.
