This 4 ingredient no bake, grain free, gluten free, Lemon & Coconut Slice is so good – for all ages!

Sour and sweet is a favourite combination for me, and turns out she loves it too. I had some stuff to use up in the cupboard which is how these came about, and I love the simplicity of how few ingredients this required, how healthy they were & how good they tasted (& baby/toddler appropriate – see notes!)

Because lemon is acidic it can upset little tummies, however this only has 2 Tbsp spread across 20 bars which is a couple drops per bar (they are quite big pieces too so you could cut in half further to make 40 pieces). However feel free to reduce to 1 Tbsp for a light lemon flavour (or for older kids and adults increase to 4 Tbsp for a strong lemon flavour – if doing that, reduce the added water to 2 Tbsp instead of 1/4 of a cup as a result).

Also these are soft for little ones. You can add the water as you blend till just combined instead if serving for older kids/adults for a firmer texture.

Benefits of lemon for babies

One of the key benefits of lemons is that they are a rich source of vitamin C, which is essential for the development of healthy skin, bones, and tissues. Vitamin C also plays a crucial role in strengthening the immune system and preventing infections.

Lemons are also an excellent source of potassium, which is important for maintaining healthy blood pressure and supporting heart function. Additionally, the flavonoids in lemons have antioxidant properties that help protect the body from harmful free radicals.

Introducing lemons to your baby’s diet can be done by adding a small amount of lemon juice to water, purees, or yogurt. As your baby grows, they may enjoy the flavor of lemons on their own or as a dressing for salads or vegetables.

It’s important to note that while lemons are a nutritious addition to your baby’s diet, they are also highly acidic. For this reason, it’s recommended to limit the amount of lemon juice given to babies and to always dilute it with water or mixed in foods. Additionally, if your baby has acid reflux or other digestive issues, it may be best to avoid giving them lemons altogether.

Make sure to always consult with a paediatrician before introducing new foods to your baby’s diet, and start with a small amount to monitor for any potential allergic reactions.

Lemon & Coconut Slice

Ingredients

  • 1.25 cups (190g) raw cashews
  • 1.25 cups (82g) shredded or desiccated coconut
  • 1/4 cup (60g) dried dates (soaked for 10 minutes in hot water)
  • 2 tbsp lemon juice
  • 1/4 cup date water (reserved from soaking the dates)

Instructions 

  • Add all ingredients to a food processor and blend till combined and no chunks of nuts remain
  • Add the mix to a lined dish, approx 7”x4” size, and press down firmly, smoothing out with a spoon. It will be about 1cm in thickness. 
  • Place in the fridge to set for an hour before slicing. 
  • Store in the fridge for 3 days or freezer for 2 months.

    Easy, yummy and we added monkfruit sweetener for no-sugar no-chemicals sweetness. Was fine for a tummy that can’t handle artificial sweetener or sugar. Recommend!

    These are SO GOOD!! Thanks for such a quick and easy recipe that my 8month old loves. I added hemp and flax for a bit of extra omegas. Will definitely be making these again.
