Stuck for a quick & healthy breakfast idea? This Overnight Weetabix Berry Cheesecake is such a quick and healthy breakfast to make the night before when there’s a busy morning ahead. And if you don’t like chia jam then mashed berries work well here too (there’s multiple recipes for chia jams on this website too).

Overnight Weetabix Berry Cheesecake

Prep Time 2 minutes
Servings 1 child

Ingredients

  • 1 Weetabix (you can substitute with shredded wheat (20-25g))
  • 1/4 cup/ 60ml of Soy milk (or other)
  • 2 Tbsp of Coconut yogurt (or other)
  • 1 Tbsp of Chia jam (or mashed berries)

Optional extra toppings

  • We added strawberries & almond butter (stirred in to reduce choking hazard)

Instructions 

  • Crush the Weetabix into a bowl or container then top with your milk. 
  • Leave to sit for a few minutes until the liquid is absorbed and then top with some coconut yogurt and chia jam (or berries). 
  • Cover and place in the fridge for one hour or overnight. 
  • Enjoy as is or add any toppings - if you use nut butter make sure it is thin and stirred through well to reduce choking hazards. 

Notes

If you don’t have time to wait for the milk to absorb just over and place in the fridge until serving and then top with the yogurt and jam then. 
Store in the fridge for up to 2 days.
