These vegan quinoa and broccoli wraps are super versatile and you can use them for the base of a meal or a quick on the go snack.  Packed with protein and some extra broccoli these are a great baby led weaning option that are suitable from 6 months as you can cut in to suitable sized strips for younger babies.

Quinoa and Broccoli Wraps

Prep Time 5 minutes
Cook Time 10 minutes
Servings 4 wraps

Ingredients

  • 1/2 cup /65g of wholewheat flour (also called wholmeal, you can sub with plain or spelt flour )
  • 1/2 cup/ 125ml of soy milk (or other)
  • 1/2 tsp of baking powder
  • 1/4 cup of water
  • 1/3 cup /60g of cooked quinoa
  • 1/3 cup /4 Tbsp of broccoli florets (inely cut/shaved off)
  • 1/2 tsp of garlic powder (optional)
  • Olive oil spray for the pan

Instructions

  • To a bowl add the flour & milk, lightly stirring together to remove any lumps.
  • Then add the remaining ingredients and stir together, whisking with a fork.
  • Spray a frying pan with olive oil & add around 1/3 - 1/4 of the batter (depending how big and how many you want) using a spatula to help spread/thin the wraps out & then cook 3 minutes each side (I spray the wrap before flipping also).
  • Repeat for 3-4 wraps.
  • Fill with whatever you like or eat plain.

Notes

Store leftovers in the fridge for 3 days or freeze individually wrapped for 2 months.

There could be a few things at play. The pan may not have been hot enough, or if there is any warping on your pan it doesn’t allow proper heating across the whole wrap and can cause it to not cook evenly. The other thing may be too much filling to flour ratio.
