Vegan 🌱 Gluten free ✨ Baby Led Weaning 👶🏼 Suitable 6+months

These are so tasty and not just for babies or toddlers 🙌🏼🤩- and while she only ate a few here (& a small handful with her lunch) it’s a win for finally trying zucchini in plain sight. The “crumb” is so healthy too and gluten free. I ended up doubling this recipe and ate around 3 full zucchinis myself 🤩

Zucchini Fries

Ingredients

  • 2 Small zucchinis/courgettes
  • 1 Tbsp Olive oil
  • 3 Tbsp Almond flour
  • 2 Tbsp Nutritional yeast
  • 1 Tsp Paprika
  • 1 Sprinkle Garlic powder

Instructions 

  • Cut the zucchini in half, then into “fries” about 1cm in thickness.
  • Add the olive oil and toss to cover
  • Add the reminding ingredients for the crumbs and toss with tongs to coat.
  • Either cook in the airfryer by laying in one layer in the basket at 200c for 10mins turning halfway or on a tray with baking paper in one layer in the oven at 200c for ~15mins (oven depending), also turning half way.
  • Best served warm

Notes

These don’t need any sauce as the crumb is so flavourful, but I made a quick cheesy tomato sauce of tomato paste, water and nutritional yeast 🤤👌🏼
