🌽✨Ready within 15 minutes: Super Simple Corn Fritters ✨🌽
These are so tasty, easy for little ones to hold, and travel well in lunchboxes. This recipe makes 10-12 fritters which are vegan, can be made gluten free (see the notes), are suitable from 6 months (mash the corn to avoid any choking hazards), and best of all they are ready in under 15 minutes!

Super Simple Corn Fritters
Ingredients
- 1/2 Cup Plain flour (Wholemeal/wholewheat also works)
- 1/4 Cup Polenta
- 1 Cup Corn (we used tinned no added salt; *you can gently mash to reduce choking hazards for babies)
- 1 Tsp Garlic powder
- 1/4 Tsp Smoked paprika
- 1 Large spring onion (2 small; finely chopped)
- 1/2 Cup Soy milk (or other plant based milk)
- Olive oil for cooking (spray to coat the pan; or 1 Tbsp)
Instructions
- Stir together all the ingredients
- Spray a pan with olive oil and spoon in the mix, forming 10-12 fritters.
- Cook on medium-high for 3 minutes on one side then flip & cook for a further 2 mins till lightly golden
- Best served warm
Notes
Store in the fridge for 2 days or freezer for 3 months
To make these Gluten Free, just sub the plain flour with an all purpose gluten free flour.

I make these frequently. My son loves them and I do too. We have them with ketchup. I do add about 1/4 tsp of salt to the recipe and I pulse my corn with the green onion in my food processor.
