These Apple Donut Pancakes are such a fun and healthy way to serve doughnuts to little ones. They are simply apples dipped in pancake batter, cooked, and voila, apple doughnut pancakes.

Apple Donut Pancakes
Ingredients
Pancake Batter Ingredients (this is 1/2 a batch of our banana oat pancakes recipe)
- 1/2 a cup /60g of oat flour
- 1/2 a banana
- 1/3 cup /80ml of soy milk
- 1/2 tsp of baking powder
Other Ingredients
- 2 apples
- 1-2 Tbsp of coconut oil (for cooking)
Instructions
- Blend all the pancake batter ingredients together (or whatever pancakes you usually make).
- Preheat a large frypan over medium-high heat with 1 tablespoon of coconut oil.
- Then prepare the apples by peeling and then slicing them through the core so each piece can have a circle cut through them to create a donut shape. Use a cookie cutter or similar to cut the core out, leaving a hole. Dip each slice of apple into the pancake batter then place in the frypan.
- Cook for 2-3 minutes each side.
- Serve plain or with toppings (we did a very thin spread of nut butter with desiccated coconut, chia jam and coconut, and coconut yogurt with ground flaxseed).
Notes
❗️To make this suitable for 6 -12 months make sure to slice the apples very thin and cook on a lower heat and for and longer time to ensure they are soft when serving.
Store leftovers in the fridge for 3 days.
