These apricot bliss balls are a healthy sweet treat for little ones. Theyโ€™re loaded with healthy fats, fibre, and nutrients, however because this contains dried fruit which is high in sugar (although natural) itโ€™s better to offer as an occasional snack, and from the age of 12 months. Some people prefer to wait until 2 years of age, however we provide healthy and natural sweet things like this in moderation (which is all personal choice)

Apricot Bliss Balls

Ingredients

  • 1 cup (185g) dried apricots (we prefer the no preservative ones - they are brown in colour)
  • 1 cup (140g) raw cashews
  • 1 cup (160g) dried dates pitted
  • 1 cup (100g) shredded coconut
  • 1/2 cup (50g) shredded coconut for rolling (optional)

Instructions 

  • Soak the apricots, cashews & dates in hot water for 10 minutes, then drain and add to a food processor along with the coconut.
  • Process until combined (approx 45-60 seconds till no chunks remain).
  • Roll in to balls using approx 1 Tbsp of the mixture. Optional step is to roll in some extra coconut
  • Serve either as balls or if you have a little one that shoves them in whole you can break in to small pieces to minimise choking hazards.

Notes

These freeze really well for up to 3 months.
