Our Carrot Cake Porridge is not only a delicious way to start your day, but it also provides a variety of health benefits. The addition of carrot is not only a good way to get an extra veggie in at the start of the day, but is also a good source of antioxidants, fibre, beta carotene and vitamin A & C. We make this carrot cake version with our standard porridge recipe and customise it with spices, sultanas and carrots for a more festive treat, perfect for Easter!

To give it an extra nutritional boost and enhance its creaminess, you can add or too with chia seeds, coconut or flaxseed oil. With its versatile ingredients, this porridge is perfect for those looking for a filling and healthy breakfast option.

Benefits of oats for babies

Carrot Cake Porridge

Servings 1 adult & 1 baby/toddler

Ingredients

  • 1 medium carrot finely grated
  • 1/2 cup (60g) rolled oats (can use quick/porridge oats)
  • 2 tbsp raisins (can omit or chop for under 18 months)
  • 1/4 tsp ground cinnamon
  • 1/4 tsp ground ginger
  • 1/4 tsp ground nutmet
  • 1/2 cup (125ml) water
  • 1/2 cup (125ml) soy milk (or other plant based milk)

Instructions 

  • Finely grate the carrot, then add all ingredients to a pan, stir to combine and cook over medium heat till soft (around 5-10 minutes).
  • Serve warm.
  • We top ours with some extra seeds (& pumpkin seeds on the adults portion, or chop or grind finely for toddlers/babies).
