These pinwheels contain zucchini, spinach, basil & broccoli – which usually aren’t a favourite among toddlers, but when paired with vegan cheese in puff pastry become a fun treat for little ones (whilst also getting the veggies in for them!).

Cheesy Green Pinwheels

Ingredients

  • 1 sheet puff pastry
  • 1/2 medium zucchini (grated, squeeze the liquid out)
  • 1 handful baby spinach (chopped)
  • 10 g fresh basil (chopped)
  • 50 g broccoli (steamed and finely chopped)
  • 50 g vegan cheese (grated)
  • 1 tsp soy milk (to brush the pastry)

Instructions 

  • Preheat the oven to 200c/390f.
  • Combine all the veggies in a bowl.
  • Place the veggie mix across the pastry, leaving around 1 inch of space from the sides and end (the veggies move as you roll and will spill out otherwise) then top the veggies with the cheese.
  • Gently press and roll into a log and then slice into approx 2cm slices, making 10 rolls.
  • Gently place on a sheet of baking paper/tray, brush the sides of the pastry with the soy milk and bake for 25-30mins until golden.

Storage

Store in the fridge for 3 days or freeze cooked for 2 months. We reheat ours in the air fryer for 3-5 minutes.

  1. My broccoli hating 14 month old loves these reheated in the microwave! (Doesn’t seem to be a fan on flaky pastry). I love them too.

      Oh good tip, the soft pastry must be a nicer texture for them.

    • Our household isn’t vegan, but my 10 month is severely allergic to eggs so we’ve had to find a lot of alternatives. The pinwheels are amazing. Our whole household loves them, sometimes we add turkey and make it a lunch. Great for on the go food or going to the zoo or park.
