One Pot Mushroom Orzo
Ingredients
- 1 small onion (diced)
- 2 cloves garlic (minced)
- 2 tbsp olive oil
- 250 g mushrooms (we used a mix of shiitake, oyster, and white mushrooms; chop/dice finely for younger babies)
- 250 g orzo
- 250 ml soy milk
- 375 ml vegetable stock (low salt)
- 1/2 lemon (juice)
- 50 g vegan cheese (grated)
- salt and pepper (to taste, for over 12 months)
- 100 g baby spinach (to serve, finely chop for under 18 months)
Instructions
- Add the olive oil, garlic & onion to a pot and cook over medium heat till soft, around 3-5mins.
- Add the mushrooms to the pot and cook till soft, around 5 mins.
- Add the orzo, soy milk & stock & bring to a boil. Then reduce heat to a simmer and cook for 10 minutes till the orzo is cooked and most of the liquid has been absorbed (it will keep absorbing while you serve).
- Stir in the lemon juice, cheese, spinach, & any optional seasonings and serve.
Storage
Store in the fridge for 3 days, and reheat by adding a little water to loosen the orzo.Did you make this recipe?

This was yummy!!! I used portobella and oyster mushrooms and powdered spinach as I didnt have other. Best to eat it fresh. Next day I added a bit of water while reheating. Thank you for recipe <3

My 11 month old loved it, as did we! I used oat milk and skipped the cheese and it’s the most I’ve ever seen her eat and she thoroughly enjoyed it which was lovely to see, she wanted seconds and some of mine! Definitely going to be a regular on our menu now 😊
