Simple, wholesome, basic desserts win every time 🙌🏼 And this one is so simple that you really can’t go wrong. One of the best parts about a galette is that it’s naturally rustic, so you can simply pile all the apples in or arrange them in a pattern, and they both look great.

I’m usually of the opinion that “pastry takes too long to make,” but this one is super easy to make and just the right thickness and sweetness level - but if you’re short on time, feel free to use a store-bought shortcrust pastry sheet for an even easier dessert.

We baked this in the Culinary Co By Manu 20cm Cast Iron Fry Pan from @spotlightstores and it is the ONLY way I’m baking pies from now on! The cast iron distributes heat evenly and helps create a crisp, golden base, and is the perfect size for a family dish. We served it up on the new Chateau dinner plates and cutlery, with a scoop of ice cream and date caramel sauce, and it was the ultimate cosy dessert ✨

Did you know you can make a thick, spoonable jelly in minutes with just a few simple ingredients?

I’ve been using psyllium husk to do exactly that 🙌🏼 it’s such an easy way to turn a basic fibre boost into something a bit more fun and functional in the morning.

I’ve also boosted this simple jelly recipe into a more longevity-focused version by adding @AgeMate Daily Longevity Blend, which contains 18 longevity ingredients including NMN to support healthy ageing. I’ve been using this now for 2.5 months and have noticed changes in my sleep, and my energy has felt more stable all month long (note: this one is for the adults - NOT the kids!!)

This is another easy way you can include it in your morning routine - you can have this jelly straight from the spoon or stir it through yoghurt to boost your breakfast bowl.

Recipe per shot:
💜 1/3 cup blueberry juice (or any juice you like)
🌱 1 tbsp psyllium husk
🫐 1 scoop @AgeMate Daily Longevity Blend
🍋 Squeeze of lemon juice

Stir together and leave for 1–2 minutes to thicken. Thin with extra liquid if preferred. Store airtight in the fridge for up to 3 days.

Because psyllium absorbs liquid, make sure you’re drinking plenty of water alongside it ☺️

Most chocolate spreads are packed with palm oil, refined sugar, and additives, but this one isn’t! It’s a recipe that both little and big family members can all enjoy - you can even swap cacao for carob if serving to toddlers under 24 months. 

It’s made with simple, wholefood ingredients you probably already have in your pantry. It’s high in fibre, protein, has no added sugar, and is nut-free (so technically not a “nut-ella” but the swap means it’s suitable for a lot more kids and school safe!!), dairy-free, and made with just four ingredients.

Every ingredient adds something nourishing:
✨ Chickpeas are high in fibre and protein to keep little tummies full and support steady energy (and no you can’t taste them!)
✨ Dates provide natural sugars, minerals, and fibre for digestion
✨ Cacao is full of antioxidants and magnesium 
✨ Soy milk contributes extra protein, calcium, and creaminess.

I don’t blame you if you’re feeling sceptical - olive oil and ice cream didn’t sit right with me at first either. But let this recipe convince you! The key is using a high quality olive oil with the right flavour profile, so we make this with Bertolli Extra Virgin Olive Oil, which is cold pressed for a full-bodied, fruity flavour that makes such a difference in simple recipes like this.

It’s the creamiest vegan ice cream that’s rich, sweet, lightly fruity, made with a handful of pantry basics, and can even be made without an ice cream maker thanks to the olive oil - and to top it off, it’s served with a 2 ingredient caramel made from just @bertollioliveoil_australia olive oil and maple syrup 👌🏼

✨ SOY-FREE BURMESE TOFU ✨ It took me six years to ✨ SOY-FREE BURMESE TOFU ✨

It took me six years to finally make this, and I regret it taking me so long 😅 this Burmese tofu is so simple, easy, and cheap! It’s made with just chickpea flour and water (and optional salt and turmeric) and it makes for such a nice swap from regular soy tofu (perfect for allergy families!)

It’s a great dish to prep ahead so you’ve got an easy and different plant protein that you can add to salads, veggie bowls, as a popcorn nugget snack, or however you like!

🥭 MANGO LASSI ICECREAMS ✨ What’s a better way to 🥭 MANGO LASSI ICECREAMS ✨

What’s a better way to have a mango icecream than in a mango cheek shape… there is none. These Mango Lassi Icecreams take 5 minutes to prep, they’re creamy, baby-friendly (6+ months), and naturally sweet. 

INGREDIENTS:
2 Mangoes (the flesh - about 600g diced)
1/2 cup of unsweetened coconut yoghurt
Optional: seeds from 2–4 cardamom pods

Other optional add-ins: a tiny grate of fresh ginger, a squeeze of lime, or a pinch of turmeric

HOW TO:
1. Carefully score and scoop out the mango cheeks (we’re using the cheeks as the popsicle moulds!). Trim around the seed to get all that extra mango goodness.
2. Add mango flesh, coconut yoghurt, and any optional flavours into a blender. Blend until completely smooth.
3. In the centre of each mango cheek, slice a small line just wide enough for your popsicle stick. Insert the stick halfway.
4. Place the cheeks on a tray. Pour the mango mix into each cheek, nudging it under the stick and smoothing the top so it keeps its classic mango shape.
5. Freeze for 4 hours or overnight, until completely set.
6. Pop out and enjoy
