Simple French Toast

Ingredients

  • 1/2 banana (100g)
  • 1 tsp ground flaxseed
  • 1/2 tsp ground cinnamon
  • 125 ml soy milk
  • 2 slices bread (thick slices, not loaf slices)
  • 1 Tbsp coconut oil (for cooking)

Instructions 

  • Mash the banana with a fork, then add the flaxseed, cinnamon and soy milk & stir to combine. 
  • Place each slice of bread in for approx 10 seconds to absorb, turn and repeat for both slices. 
  • Add the coconut oil to a frying pan on medium/high heat, then add each slice and cook 3-4mins each side 
  • Serve warm. 
  • This makes enough for one adult and one baby/toddler. Serve the baby pieces in appropriate sizes.
