Vegan 🌱 Baby Led Weaning 👶🏼 Suitable 12+ months
This 3 ingredient banana oat muffin recipe makes 9 muffins, takes minimal time to prep and make, and is a great healthy option for batch cooking and stocking the freezer up with these for quick breakfasts and snacks for all ages. This is gluten free if you use gluten free oats, and it also works as a good base as you can add loads of different add ins like sultanas, chocolate chips (for older kids), or blueberries.
These are not fluffy muffins as they are made with minimal ingredients, zero oil, and use oats as the flour – they are kind of like a light banana flavoured porridge muffin. They are however delicious and healthy and make for a great quick breakfast as you can batch cook and freeze these. These are recommended for 12+ months due to the texture, however can be served 6+ months if you cut in to thin strips/pieces.

3 Ingredient Banana Oat Muffins
Ingredients
- 2 cups/ 200g of Rolled Oats
- 2 very ripe medium bananas
- 1 cup /250ml of Soy milk
- 1 tsp of Baking powder ((optional))
Instructions
- Preheat the oven to 180c fan.
- Add the oats to a blender and blend into a flour.
- Add the remaining ingredients and blend quickly (around 5-10 seconds to combine - or hand mash and stir to combine).
- Pour into a muffin tin (greased or lined) and add any toppings - we like a little slice of banana or chocolate chips for older kids (and adults).
- Cook for 25 minutes (a couple minutes more or less depending on your oven, do the toothpick test).
- Allow to cool for 10 minutes in the tray before placing on a cooling rack to cool.
- Serve warm or cold - these will firm up as they cool.
