Makes 12 fritters (2-3 work as a good serving size)

Cheezy Broccoli & Quinoa Fritters
Ingredients
- 2 Cups Steamed broccoli (Good for using up leftovers)
- 2 Cloves Minced Garlic
- 1 Cup Cooked quinoa (You could cook in veggie stock for extra flavour)
- 4 Tbsp Gram/Chickpea flour
- 1 Cup Water
- 1 Tsp Paprika (Or any other spices you want to add)
- 1/3 Cup Nutritional yeast (This adds the cheesy flavour)
Optional Extras
- Grated vegan cheese
- Carrot (Or any other cooked veggies you have that need using up)
Instructions
- Blitz the cooked broccoli in the food processor
- Add the garlic and quinoa to the broccoli (using food processor as the mixing bowl - less washing up ๐๐ผ)
- Mix the chickpea flour with water till mixed in then add the paprika and nooch and stir to combine
- Spray a fry pan with some oil (we use olive oil) and set to medium/high
- Portion out 6 fritters (half the batter), cooking for 3-4 minutes, spray the tops with some extra oil and then flip, cooking about 2 minutes on the other side.
- Remove and repeat with the remaining batter
- Serve warm ๐
Notes
Store in the fridge for 3 days or the freezer for 2 months
