We love frozen yogurt bark, so I thought I’d make a twist on that today as Ava is currently teething and not wanting her normal snacks, so we made a chia jam bark to get some extra protein and goodness into her. She LOVED it. It is naturally sweet, contains loads of nutrients from the raspberries and chia seeds, and topped with some coconut yogurt for more healthy fats. There is so many different variations you could make with this – like adding nut butter, extra chopped pieces of fruit, and swapping out the raspberry chia jam for whatever berries you prefer.

Frozen Chia Jam Bark
Ingredients
1 cup of chia jam
- 250g of Frozen Raspberries (any fresh or frozen berry/combination will work)
- 2 Tbsp of Chia Seeds
To top
- 4 Tbsp of Coconut yogurt (you can use whatever you prefer)
Instructions
- Make the chia jam by heating the berries in a pan until soft enough to mash with the back of a spoon (if using berries like strawberries, cherries etc you will need to blend to remove chunks), then stir through the chia seeds and allow to sit for ten minutes for the chia seeds to thicken the jam.
- Pour the jam onto a lined baking tray or dish and spread out in to a thin rectangular shape (around .5cm in thickness).
- Add 4 Tbsp of yogurt on top & stir through, leaving a little texture. You could add extra chopped fruit, seeds, or nut butter if you liked here too.
- Place in the freezer until solid (around 2 hours).
- Break the bark into easy to hold pieces. This defrosts very quickly so any pull out however much you want to serve/have eaten at a time.
