These No-Bake Granola Breakfast Bars are the easiest stir-together recipe you need in your life. Simple, packed with goodness, and perfect for adults as well as toddlers.
No-Bake Granola Breakfast Bars
18+ months due to the dried fruit, maple syrup and nuts/seeds (finely chopped)
Ingredients
- 1/2 cup /125g of almond butter (or other nut butter)
- 1/2 cup /125ml of maple syrup (or rice malt; you can drop this down to 1/4 cup if you dont want them as sweet. If doing this sub with extra nut butter)
- 1/3 cup /80ml of melted coconut oil
- 2 cups /220g of rolled oats
- 1 cup /150g of nuts or seeds (chopped* (we used pumpkin, hemp and cashews))
- 1/2 cup /80g of dried fruit (we did 50:50 cranberries and raisins)
- 1 tsp of ground cinnamon
- Optional: 1/4 tsp of sea salt*
Instructions
- Add the almond butter, maple syrup and coconut oil to a large bowl and whisk together to combine. Then add all of the remaining ingredients and stir to combine.
- Spoon the mixture into a lined dish (ours was 20x20cm) and press down firmly to flatten.
- Place in the fridge or freezer until set then slice into whatever sized bars or squares you like and enjoy!
Notes
Keep stored in the fridge or freezer in an airtight container (this will last up to 1 week in the fridge or 1 month in the freezer).
